Add chopped tomatoes, red and green bell peppers, and cook until softened, about 8-10 minutes.
Blend the mixture into a smooth paste using a blender or food processor, adding a little water if needed.
Return the blended mixture to the pot and bring to a simmer.
Add the soaked black-eyed peas, seasoning cubes, bay leaves, and salt to taste.
Pour in enough water to cover the beans and stir well.
Cover and cook on low heat for 30-40 minutes, stirring occasionally, until beans are tender.
Add chopped carrots and spinach, and cook for an additional 10 minutes until vegetables are tender.
Adjust seasoning as needed and remove from heat.
Serve hot with rice or bread.
