Welcome to the recipe introduction.
Activate yeast in warm milk with half of the sugar until frothy.
Add butter and beaten egg to the yeast mixture and mix well.
In a bowl, combine half of the flour with sugar and salt, then pour in the yeast mixture.
Mix the batter for about 3 minutes to activate gluten.
Add more flour and mix for another 3 minutes.
Add about 1 oz of oil and mix in, then let the dough rest until doubled in size (1 to 1.5 hours).
Divide the dough into 40g pieces and shape them into balls gently.
Place shaped dough on a baking sheet lined with parchment paper and cover lightly with plastic wrap to proof.
Brush proofed rolls with egg wash (egg mixed with milk).
Bake rolls for 20-25 minutes until golden brown, then brush with melted butter.
Prepare sweet chili sauce by combining water and sugar over low heat until dissolved.
Add vinegar, minced garlic, and chili flakes to the mixture and stir.
Allow the sauce to simmer to thicken.
Combine water and corn starch, pour into the sauce while stirring, and boil for a few seconds to activate the corn starch.
Remove sauce from heat and let cool before storing in a jar.
Season chicken wings with bean seasoning, garlic powder, onion powder, black pepper, and salt, and marinate in the fridge for 1 hour.
Prepare flour dredge by combining flour, baking powder, corn starch, and the same seasonings used on the wings.
Coat chicken wings in the flour mixture in two batches, ensuring they are well coated and dust off excess flour.
Heat 2-3 inches of oil in a pan over medium heat.
Fry the wings, starting with the flats, for about 10 minutes total (5 minutes on each side) until golden brown and cooked through.
Remove wings from oil and drain on a cooling rack to keep them crispy.
Repeat frying process for the drumsticks.
Fry store-bought frozen chips until crispy on the outside and fluffy on the inside.
Plate the dish with fries, chicken wings, sweet chili sauce, and bread rolls.
