Prepare a 9-inch cheesecake pan by adding parchment paper on the bottom and oiling the sides.

In a large bowl, combine 2 cups of graham cracker crumbs, 1/2 cup of sugar, zest of 1.5 lemons, and 2 pinches of kosher salt. Mix well.

Add 130 grams of melted butter to the mixture and combine using a spatula and your hands until well mixed and wet.

Spread the crust mixture evenly in the cheesecake pan, pressing it down with a measuring cup and your hands.

Bake the crust in a preheated oven at 350°F (180°C) for 12 minutes.

While the crust is baking, in the same bowl, add juice of 2 medium lemons (80-100 millilitres). Separate 50 millilitres of the juice and mix with 1 tablespoon of non-flavored gelatine powder.

Heat the remaining lemon juice in the microwave until almost boiling, then add it to the gelatine mixture and mix until dissolved. Set aside.

In a larger bowl, add 2 cans of condensed milk. Use one of the empty cans to measure and add heavy cream, then mix for about 30 seconds.

Add the lemon juice mixture with gelatine to the condensed milk and heavy cream mixture. Blend or mix until thickened, about 1-2 minutes.

Pour the filling over the baked crust and smooth the top with a spatula. Cover and refrigerate for about 20 minutes until thickened.

In the same larger bowl, add 2 cups of cold heavy cream, 2 tablespoons of icing sugar, and 1/4 vanilla bean or 1/4 teaspoon vanilla paste. Beat until Chantilly texture is achieved.

Remove the pie from the fridge and gently spread the whipped cream on top. Optionally, use a piping bag for decoration.
