Start with grapes to make still wine, typically using Pinot Noir and Chardonnay.

Put the still wine into a bottle that has a shape similar to traditional champagne bottles.

Add a little bit of yeast and a little bit of sugar to the wine in the bottle.

Cork the bottle and place it in a riddling rack, which is a frame that holds the bottles almost horizontally.

Every 6 months, turn the bottle a quarter turn to help the sediment collect in the neck of the bottle.

When ready, freeze the neck of the bottle to solidify the sediment.

Open the bottle, allowing the carbonation and pressure to push out the frozen yeast and sediment.

Optionally, add a dosage of sugar to adjust the sweetness of the champagne or sparkling wine before recorking the bottle.
