Let the meat mixture cool to thicken before adding cheese, ensuring the stove is off to prevent melting the cheese.
Add cheese to the cooled meat mixture, folding it in without melting it.
Boil lasagna pasta for about 6 minutes, then lay it out to cool.
Use an ice cream scooper to take a scoop of the meat mixture and roll it in the pasta, tucking it in as you go.
Repeat the rolling process until all the mixture is used up, noting some may be larger than others.
Place the rolled lasagna bites in the freezer for about an hour to firm up.
Prepare three bowls: one with bread crumbs, one with cracked eggs, and one for flour (though flour is not available).
Coat the lasagna bites in egg and then in bread crumbs, using hands to ensure coverage.
Fry the breaded lasagna bites until golden brown, noting some may be double breaded and some single.
Taste the finished product, comparing sizes and noting the difference in texture and flavor.
