Quick Cherry Tomato Pasta Recipe / Creamy Tomato Pasta with Burrata

Heat 3-4 Tbsp olive oil (or unsalted butter) in a pan over medium heat.

Add 2 cloves of minced garlic and sauté for 1 minute.

Stir in 1/2 tsp red pepper flakes (reduce if you prefer less spicy).

Add 1 Tbsp of tomato paste and cook for 1 minute.

Add 250 g of halved cherry tomatoes and cook for 1-2 minutes until softened.

Reduce heat to low and stir in 100 g (1/2 cup) of heavy cream.

Add 2 Tbsp of parmesan cheese and a pinch of salt, stirring to combine.

Cook 250 g of pasta according to package instructions, reserving 1 cup of the pasta cooking water.

Add 1/4 cup of the reserved pasta water to the sauce and stir until the pasta is coated with the sauce, adding more pasta water if it's too thick.

Finish with 1 Tbsp of chopped chives (or parsley), burrata cheese, and a drizzle of olive oil.

Sprinkle with additional red pepper flakes if desired. Enjoy!
