3 big garlic cloves

4-5 tablespoons pasta stock
1/2 cup cooking cream
pinch of black pepper
1/4 teaspoon dried oregano
1/4 teaspoon dried basil
2-3 tablespoons parmesan cheese
fresh or dried parsley/basil leaves

Bring 5 cups of water to a boiling point in a pot.

Add 1/2 teaspoon salt and 2 cups of dried penne rigate pasta.

Cook the pasta al dente for 10-11 minutes, stirring occasionally.

Once cooked, strain the pasta and reserve the stock for later.

Drizzle some olive oil on the pasta to avoid sticking.

In a separate pan, melt 2 tablespoons of butter and 1 tablespoon of olive oil over low heat.

Add 3 minced garlic cloves and sauté for a few seconds.

If desired, add chili flakes for spice.

Add 2 big roughly sliced tomatoes, 1 teaspoon salt, and 1 teaspoon sugar.

Cover and cook on low heat for 5-10 minutes, mashing the tomatoes well.

Remove the tomato skins if desired.

Stir in 2 tablespoons of tomato paste and 4-5 tablespoons of the reserved pasta stock.

Add 1/2 cup of cooking cream, a pinch of black pepper, and 1/4 teaspoon each of dried oregano and basil.
