Preheat oven to 200°C (400°F).
Roll out puff pastry on a floured surface until thin.
Mix sausage meat with finely chopped onion, garlic, parsley, thyme, and spices.
Form the sausage mixture into a log shape along the edge of the pastry.
Brush the edge of the pastry with beaten egg.
Fold the pastry over the sausage mixture and seal the edges.
Cut the roll into individual pieces, about 5-7 cm long.
Place the rolls on a baking sheet lined with parchment paper.
Brush the tops with remaining egg wash.
Bake in the preheated oven until golden brown, about 20-25 minutes.
Let cool slightly before serving.
