Sugar Cookie Bars

1 tsp baking powder
1/2 tsp salt
1 cup unsalted butter, softened
1 1/2 cups granulated sugar
1 large egg
1 tsp vanilla extract
1/2 tsp almond extract (optional)
1/4 cup colored sprinkles (for topping)
1 cup pistachios, chopped

Preheat your oven to 350°F (175°C).

In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.

In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.

Add the egg, vanilla extract, and almond extract (if using) to the butter mixture and mix until well combined.

Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

Fold in the chopped pistachios.

Spread the cookie dough evenly into a greased 9x13 inch baking pan.

Sprinkle colored sprinkles on top of the dough, pressing them in slightly.

Bake in the preheated oven for 20-25 minutes, or until the edges are lightly golden and a toothpick inserted in the center comes out clean.

Allow the bars to cool in the pan for about 10 minutes before transferring to a wire rack to cool completely.
