Rinse rice under cold water until water runs clear.
Cook rice in boiling water until tender, about 15-20 minutes.
Soak lentils in water for 30 minutes, then drain.
Boil lentils in fresh water until soft, about 20-25 minutes.
Heat mustard oil in a pan over medium heat until shimmering.
Add chopped onions and sauté until translucent, about 5 minutes.
Stir in ginger, garlic, and green chili; cook for 2 minutes.
Add boiled lentils, turmeric, coriander, and cumin; mix well and simmer for 10 minutes.
Prepare gundruk by soaking it in water for 10 minutes, then drain.
Stir-fry gundruk in a separate pan with a little oil for 5 minutes.
For momos, fill wrappers with seasoned meat or vegetables and steam for 15 minutes.
Serve rice with lentils, gundruk, and momos on the side.
