Toast peanuts in a dry skillet over medium heat until fragrant, about 5 minutes.

Transfer toasted peanuts to a blender and blend until smooth.

In a large pot, heat oil over medium heat and sauté onions and garlic until translucent, about 3-4 minutes.

Add diced carrots and potatoes to the pot, cooking for another 5 minutes.

Pour in the chicken or vegetable broth and bring to a boil.

Reduce heat and simmer until vegetables are tender, about 15-20 minutes.

Stir in the blended peanuts and season with cumin, oregano, salt, and pepper.

Simmer for an additional 10 minutes, stirring occasionally.

Remove from heat and add lime juice to taste.

Serve hot, garnished with chopped cilantro, avocado slices, and hard-boiled eggs.
