Melt butter in a large pot over medium heat until foamy.
Add diced veal and brown on all sides for about 5-7 minutes.
Remove veal and set aside, then add chopped onions, carrots, and celery to the pot.
Sauté vegetables until softened, about 5 minutes.
Stir in flour and cook for 1-2 minutes to create a roux.
Pour in white wine and chicken broth, stirring to combine.
Return veal to the pot, adding bay leaves and thyme.
Bring to a simmer, cover, and cook for 1.5-2 hours until veal is tender.
Add sliced mushrooms and cook for an additional 15 minutes.
In a bowl, whisk together heavy cream, egg yolks, and lemon juice.
Temper the cream mixture with a bit of the hot broth, then stir it back into the pot.
Cook gently for 5 minutes, stirring until thickened.
Season with salt and black pepper to taste.
Garnish with chopped parsley before serving.
