Kangumuu, originating from the coastal regions of Kenya, is a traditional dish made from maize flour, often served during communal gatherings and celebrations. It symbolizes hospitality and togetherness, as families and friends share this hearty meal. In modern times, variations of Kangumuu can be found across East Africa, adapting to local ingredients and preferences, while maintaining its essence as a staple comfort food.

In a mixing bowl, add 2 and 1/2 cups of all purpose flour.
Add sugar, 1 teaspoon baking powder, and 1/2 teaspoon baking soda to the flour.
Whisk all the dry ingredients together to combine.
Add margarine to the bowl and some vanilla essence for flavor.
Use your hands to mix the margarine into the flour until it resembles little clumps.
Gradually add milk while mixing with your fingertips, ensuring to combine all the flour with the wet ingredients.
Knead the dough for around 2 minutes, then transfer to a countertop and knead for another minute until it is firm and not sticky.
Sprinkle all purpose flour on the working surface and roll out the dough with a rolling pin to a medium thickness.
Cut the rolled dough into medium squares using a knife.
Heat cooking oil in a frying pan over medium heat for deep frying.
Check if the oil is ready by sprinkling some flour in it; it should bubble slightly.
Carefully place the dough squares in the oil when it's ready, ensuring the oil is not too hot to avoid burning the outside before cooking the inside.
Cook the half cakes for around 1 and 1/2 minutes on one side, then flip to cook the other side until they are deep golden brown.
Remove the half cakes from the oil, shaking off excess oil, and transfer them to a paper towel to drain.
Repeat frying with the remaining dough squares.
