2 ½ cups bread flour (320 g)
2 tsp. vegetable or seed oil (10g)
1 tsp. salt (6 g)
4 tsp. baking soda (20g)
2 cups water (500ml)

Mix ¾ cup + 1 tbsp. water, ¾ tsp. fresh yeast (or ½ tsp. dry yeast), and ½ tbsp. honey until well combined.

Add 2 ½ cups bread flour and 2 tsp. vegetable or seed oil, and 1 tsp. salt. Mix until there's no more dry flour, no need to knead.

Cover the mixture and let it rest for 30 minutes.

With a wet hand, stretch the 4 sides of the dough and fold them to the center. Lift the dough and slap it back, a technique called 'lift and slap'.

Cover and let rest for another 30 minutes.

Repeat the stretching and folding process, lifting and slapping 4-5 times.

Let the dough rise until it doubles in size, approximately 2 hours.

Sprinkle flour on the work surface and fold the dough to make it easier to cut. Observe the beautiful bubbles in the dough.

Cut the dough into 8 equal parts by first dividing it into 4 parts and then cutting each part in half.

Gently flatten each piece, fold it into a ball, and rub against the work surface to seal.

For longer pieces, roll them twice to form a ball. Let the balls rest for 10 minutes uncovered.

Do a quick fold to tighten the surface and pinch to seal.

Place the balls on a floured towel and cover with a towel to let rise for 30 minutes.

Prepare the water bath by mixing 4 tsp. baking soda into 2 cups of water and bringing it to a boil.

Preheat the oven while the water bath is heating up.

Cook each pretzel roll in the boiling water bath for 30 seconds on each side. You can do two at once.

Transfer the pretzel rolls to a baking pan and optionally sprinkle a little salt on top for traditional flavor.

Score the bread with two parallel cuts.

Cover with another pan of the same size and bake at 430°F (220°C) for 15 minutes.

Remove the top tray and bake for an additional 5 minutes.

Optionally, lightly brush with melted butter to keep them softer.
