Start by adding 1 and 1/2 cups of warm water to a bowl.
Add 2 and 1/4 teaspoons of active dry yeast to the water.
Add 1 tablespoon of sugar and 2 teaspoons of salt to the mixture.
Begin adding flour, starting with 2 cups, and mix until combined.
Add 2 ounces of melted butter or margarine to the mixture.
Continue adding flour, a little at a time, until a proper dough forms.
Knead the dough by hand for 8 to 10 minutes until smooth and elastic, noting that it will still be a bit sticky.
Oil the dough ball with a little canola oil to prevent drying out.
Place the dough in a warm environment (microwave with a cup of boiling water) to rise for about an hour.
Turn the risen dough out onto the countertop, using oil on your hands to prevent sticking.
Divide the dough into nine equal portions, each about 100 grams.
Shape four portions into round discs for hamburger bun shapes, pulling the top underneath and pinching to create a smooth top.
Shape the remaining portions into long rolls for hot dog bun shapes, using the same technique of pulling and pinching.
Prepare an alkaline bath by combining 8 cups of water with 1/2 cup of baking soda, stirring to dissolve before heating.
Bring the baking soda water to a gentle simmer.
Dunk each roll in the baking soda bath for about 30 seconds, ensuring all surfaces are submerged.
Place the rolls on a cookie sheet and make superficial slits on top of each roll.
Brush the rolls with an egg wash made from 1 egg and 1 tablespoon of water.
Optionally sprinkle pretzel salt on top of the rolls.
Preheat the oven to 450°F and bake the rolls for 12 to 15 minutes, rotating the pans halfway through.
Remove the rolls from the oven when they are a deep mahogany brown and let them cool completely before slicing.
