Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 cups broccoli florets
  • 2 cups fresh spinach
  • 2 medium sweet potatoes, peeled and cubed
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon lemon juice

Instructions

  1. 1Preheat the grill to medium-high heat.
  2. 2In a large bowl, combine the olive oil, garlic powder, onion powder, paprika, salt, and black pepper.
  3. 3Add the chicken breasts to the bowl and coat them evenly with the marinade. Let them sit for at least 15 minutes.
  4. 4While the chicken is marinating, bring a pot of water to a boil and add the sweet potato cubes. Boil for about 10-15 minutes or until tender. Drain and set aside.
  5. 5In a separate pot, steam the broccoli florets for about 5-7 minutes until bright green and tender-crisp. Add the spinach in the last minute to wilt it slightly.
  6. 6Remove the chicken from the marinade and place it on the preheated grill. Grill for about 6-7 minutes on each side or until the internal temperature reaches 165°F (75°C).
  7. 7Once the chicken is cooked, remove it from the grill and let it rest for a few minutes before slicing.
  8. 8To serve, place a portion of sweet potatoes, broccoli, and spinach on each plate, and top with sliced grilled chicken. Drizzle with lemon juice before serving.

  • 1 cup cooked rice
  • 1 can black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 cup salsa
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 4 large flour tortillas
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1/2 cup sour cream (optional)
  • 1/4 cup chopped fresh cilantro (optional)

Instructions

  1. 1In a large skillet over medium heat, cook the ground turkey until browned and cooked through, about 5-7 minutes.
  2. 2Add the cumin, chili powder, garlic powder, and onion powder to the turkey, stirring to combine.
  3. 3Stir in the cooked rice, black beans, corn, and salsa. Cook for an additional 3-5 minutes until heated through.
  4. 4Warm the flour tortillas in a separate pan or microwave until pliable.
  5. 5Spoon a portion of the turkey mixture onto the center of each tortilla.
  6. 6Top with shredded cheese, sour cream, and cilantro if desired.
  7. 7Fold the sides of the tortilla over the filling, then roll it up tightly from the bottom to form a burrito.
  8. 8Repeat with the remaining tortillas and filling.
  9. 9Serve immediately, or place the burritos seam-side down in a baking dish and bake at 350°F (175°C) for 10-15 minutes to melt the cheese.
