Cut the cabbage and remove the core.
Finely chop the onion and add it to the cabbage.
Add tomato puree and a little bit of water to the mixture.
Add lukewarm milk, half of the sugar, and mix everything together.
Add dry yeast and mix through, then leave aside to activate.
Once the yeast is activated, add eggs, sour cream, and melted cold unsalted butter, mixing everything together.
In a separate bowl, combine flour, remaining sugar, and a little bit of salt.
Using a dough hook, mix the dry ingredients while slowly adding the wet mixture, scraping the sides with a spatula.
Continue to add flour until the mixture is incorporated, resulting in a soft and sticky dough.
Knead the dough by hand on a floured surface, adding more flour as needed, but do not overdo it.
Place the dough in a greased bowl, cover with cling film, and let it rise in a warm place until fluffy.
Once risen, cut the dough into pieces and roll into circles.
Add about a tablespoon and a half of the cabbage filling to each circle and fold to seal.
Heat a generous amount of oil in a pan for frying.
Fry the piroshki until golden brown on both sides, then drain on paper towels.
