Sunflower seeds provide a nut-free crunch.
Prepare the mayonnaise by combining 3 boiled eggs, 2/3 cup olive oil, 1/2 cup water, 1 teaspoon salt, and 1 tablespoon vinegar in a mixing bowl.
Blend the ingredients until it reaches the consistency of mayonnaise.
Refrigerate the mayonnaise for a while.
Grate 4-5 medium-sized carrots.
Add 2-3 tablespoons of olive oil to a pan and heat it.
Add the grated carrots to the pan along with 1 teaspoon of salt.
Sauté the carrots over low heat until they lose their firmness.
Transfer the sautéed carrots to a mixing bowl to cool.
In a separate bowl, place 6 tablespoons of strained yogurt.
Add 2 tablespoons of mayonnaise to the yogurt.
Add 1 teaspoon salt and 2 cloves of garlic to the mixture and mix well.
Pour the prepared sauce over the cooled carrots and mix well, reserving a little bit of the sauce for garnish.
Add 1 cup of chopped walnuts to the carrot mixture and mix well.
Transfer the well-mixed carrot tarator to a serving dish.
Garnish the plate with the reserved sauce and top with mint fried in olive oil.
