Make the yogurt garlic sauce first. Mix yogurt with grated garlic and salt. Place the sauce in the refrigerator. You can do this earlier.

Saute the grated carrots in olive oil. Do not stir too much, otherwise, it will become mushy. Let the grated carrots soften for about 3-4 minutes. Allow it to cool to room temperature.

Once the carrots have cooled, mix them with the yogurt garlic sauce. Add some more salt to taste.

Serve the salad with a drizzle of extra virgin olive oil and some walnuts on top.
