2 large carrots, 400 g
4 tbsp olive oil
1 tsp dried purple basil (reyhan) - optional
1 cup strained yogurt
2 cloves of garlic
1/4 cup walnuts, crushed, 40 g (extra to garnish)
2 tsp salt
1 tsp pul biber (Turkish chili flakes) / Aleppo pepper
Fresh dill or parsley and extra walnuts to garnish

Peel and coarsely grate the carrots.

Heat up 2 tbsp olive oil in a large pan over medium high heat and add the grated carrots.

Add 1 tsp salt and 1 tsp crushed dried purple basil.

Stir and saute the carrots until soft and fragrant, for about 6 - 8 mins.

Set aside the carrots to cool down.

Transfer the yogurt into a large mixing bowl, crush or finely grate the garlic.

Finely chop 1/4 cup walnuts and add into the bowl.

Add 1 tsp salt, the carrots and mix to combine. (Taste and adjust garlic and salt accordingly.)

Transfer and layer the mixture onto a serving plate and optionally garnish with extra walnuts on top.

In a small sauce pan, heat up 2 tbsp olive oil, add 1 tsp pul biber, stir for 10 secs and remove from the heat.

Drizzle the chili oil over the plate.

Garnish with chopped dill or parsley to taste. Serve at room temperature and enjoy!
