Congolese Coconut Rocks

Originating from the Republic of the Congo, Coconut Rocks are a delightful treat that showcases the region's abundant coconut resources. Traditionally enjoyed during celebrations and gatherings, these sweet morsels reflect the Congolese love for simple yet flavorful desserts. Today, they are cherished not only in Congo but also in various parts of Africa and beyond, often adapted with local ingredients.
Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a mixing bowl, combine shredded coconut, sugar, and baking powder.
In a separate bowl, melt butter and mix in sweetened condensed milk and vanilla extract.
Add eggs to the wet mixture and whisk until well combined.
Pour the wet mixture into the dry coconut mixture and stir until fully incorporated.
Scoop tablespoon-sized portions of the mixture onto the prepared baking sheet, spacing them evenly.
Bake in the preheated oven for 15-20 minutes, or until the edges are golden brown.
Remove from the oven and let cool on the baking sheet for a few minutes before transferring to a wire rack.
Allow the coconut rocks to cool completely before serving.
