Whole wheat crust increases fiber content.
Use a food processor to grind up 2 cups of gluten-free animal crackers.
Add the crumbs to a mixing bowl.
Add 2 tablespoons of brown sugar and 1/4 cup of melted butter to the crumbs.
Mix until well combined.
Pour the crumb mixture into a very well-greased pie pan.
Spread the crumbs out in the pan.
Use the bottom of a cup or a jar to press the crumbs into the pan.
Use your fingers to press the crumbs onto the sides of the pan until the entire crust is firm.
Press around the edge of the crust with the cup once more.
Put the crust in the freezer while preparing the filling.
Add 8 oz of cream cheese to a mixing bowl and mix until soft using a mixer.
Add a can of sweetened condensed milk and continue to mix until well combined.
Add a can of cherry pie filling and stir until fully mixed in.
Add a tub of Cool Whip and stir until fully combined.
Add the filling to the prepared crust and use a spoon to press it down and smooth out the top.
Put the pie into the fridge for 3 to 4 hours or overnight.
Garnish the top with whipped cream and maraschino cherries.
