1

Prepare the mushrooms by slicing them thinly; do not discard the stems.

2

In a large pot, add water and the sliced mushrooms along with their soaking water and the spices.

3

Stir in thick soy sauce, about 2-3 tablespoons, and oyster sauce, about 3 tablespoons, according to desired darkness.

4

Add pork belly and chicken, followed by the boiled eggs; cover and let it boil.

5

While waiting for the soup to boil, fry the fish cake in a little oil until slightly browned, about 1 minute, then let it cool before cutting.

6

Once the soup reaches a boil, reduce heat to low and let it simmer for 20-30 minutes depending on pot size.

7

Remove the chicken and pork belly from the soup once cooked; let cool before slicing for garnish.

8

Taste the soup and add salt and sugar as needed, about 1 tablespoon each, stirring well.

9

In a bowl, mix 4 tablespoons of tapioca flour with a little water until smooth, then add to the soup to thicken it, stirring continuously.

10

If desired, beat 1 or 2 eggs and pour them into the soup while stirring to create a beautiful effect.

11

Blend garlic and chili with white vinegar, adding salt and sugar to taste before cooking it.

12

Once everything is cooked, serve the noodles in a bowl, pour the soup over, and mix well before eating.
