Jamaican Black Cake

Originating from the British colonial era, Jamaican Black Cake is a rich, spiced fruitcake traditionally enjoyed during Christmas and weddings. Families often pass down recipes, with each baker adding their unique twist. The cake's deep flavor comes from the soaking of fruits in rum and wine, making it a festive favorite that has gained popularity beyond Jamaica, celebrated in Caribbean communities worldwide.

Cream together soft brown sugar and salted butter for 3 to 5 minutes until smooth.
Whisk eggs until frothy, about 3 to 5 minutes, removing the chalaza.
Add vanilla extract, molasses, browning, lime juice, lime peel, cinnamon powder, mixed spice, nutmeg, all spice, baking powder, and salt to the egg mixture and whisk for 1 to 2 minutes.
Blend soaked fruits with Ria Nephew rum and red label wine until smooth.
Add the blended fruits to the egg mixture and mix with a hand mixer for 2 to 3 minutes.
Gradually fold in all-purpose flour, adding a little at a time for desired texture.
Transfer the batter to a 9-inch springform pan.
Bake over a water bath at 149°C (300°F) for about 1 hour.
Once baked, pour a mixture of rum and red label wine over the hot cake.
