Coconut Yoghurt

Cultural Context

Coconut yoghurt has gained popularity in Australia as a dairy-free alternative, appealing to those with lactose intolerance or a vegan lifestyle. Traditionally, yoghurt is made from dairy, but this variation uses coconut milk, which offers a creamy texture and tropical flavor. It's often enjoyed as a snack or breakfast option, and its versatility allows for various toppings and flavorings. In recent years, coconut yoghurt has become a staple in health food stores and cafes, reflecting the growing trend towards plant-based diets.

Sugar is a more economical choice.

1

Chill the coconut milk in the fridge overnight or in the freezer for about an hour before opening.

2

Sterilize your yoghurt container and utensils by boiling water and pouring it over them.

3

Open the chilled coconut milk and spoon only the thick, white coconut cream into your container, discarding the watery coconut milk.

4

Add 1 sachet (3 grams) of Yogourmet non-dairy starter to the coconut cream.

5

Add 1 teaspoon of white sugar or 1 tablespoon of honey and stir well.

6

Place the lid on the glass jar and press the vacuum button.

7

Place the yoghurt container into the yoghurt maker base and fill the base with water to the tall line indicator.

8

Set the temperature to 38 degrees Celsius and the time to 24 hours, or 12-15 hours for a sweeter yoghurt.

9

After incubation, switch off the yoghurt maker and place the yoghurt in the fridge for at least 6 hours to chill and set.

10

Once chilled, stir the yoghurt if it appears cracked or has separated coconut water.
