550g Chicken thigh fillets
¼ of medium size cabbage
3-4 medium size potatoes
1 large size carrots
1 medium size leeks
1 medium size turnip
1 whole tomato
1 medium size onion
2 fresh chillies
½ a cup of green peas
½ a cup of cut beans
A few pieces of pandan leaves
A few curry leaves
3 Tbsp cooking oil
½ Tbsp ginger powder
1 Tbsp garlic powder
1 ½ Tbsp ground pepper
2 Tbsp red chilli
1 ½ Tbsp coriander powder
1 Tsp cumin powder
1 garam masala
½ Tbsp Turmeric
500ml coconut milk

Heat up a pan under medium heat and add cooking oil.

Add onion and fresh chillies and saute until translucent.

Add curry leaves, pandan leaves and saute for about 1 ½ min.

Add all spices and mix well, and saute for about 1 min.

Add chicken and mix well until chicken coats with spices evenly and cook under medium heat for about 1 min.

Add tomatoes, potatoes and carrots and mix well, continue cooking under medium heat for 10 min with lid on.

Add turnip, mix well, and add a little water along the edge of the pan and cook for about 6 min with lid on while stirring periodically.

Add cabbage, leeks, frozen beans and peas and cook for about 5 min with the lid on.

Add coconut milk, mix well and check the salt if needed. Cover the lid, bring it to a boil on high heat, then reduce to medium-low heat and let it simmer for about 7 min.
