Melt some butter in a pot.
Add rice flour to the melted butter and start parching it on low heat for 10 to 12 minutes, stirring continuously to avoid burning.
Halfway through the parching process, add nutmeg and a sprinkle of black pepper.
Continue parching until the rice flour is nice and toasty, about 12 minutes total.
Remove from heat and add milk powder, mixing well to incorporate.
Add chopped cherries (optional) and mixed essence, and mix everything together until well distributed.
Gradually add condensed milk while mixing with fingers to achieve a compact consistency.
If the mixture is too crumbly, add more condensed milk until it becomes sticky and holds together.
Wash hands, apply some butter to them, and start forming the mixture into balls.
Set the formed balls on a plate to dry and firm up.
