Sourdough starter can be made at home, saving on store-bought yeast.
Add 1 tablespoon of yeast to a bowl.
Pour in 2 cups of warm evaporated milk.
Add 1/4 cup of honey to the bowl.
Whisk together the yeast, milk, and honey until mixed.
Let the mixture sit for 10 minutes to proof until foamy.
Add 2 teaspoons of salt and 2 tablespoons of melted butter to the mixture.
Gradually add 3 to 4 cups of all-purpose flour or bread flour, starting with 3 1/2 cups.
Mix on low to medium speed until the dough pulls away from the bowl.
Cover the bowl with a damp, warm towel and let it rise for about 1 hour until doubled in size.
Punch down the risen dough and place it on a floured surface.
Divide the dough into two equal pieces.
Shape each piece into a rectangular shape and roll it tightly into a loaf.
Place the shaped dough into a greased loaf pan.
Cover the loaf pan and let it rise for another 45 minutes.
Preheat the oven to 325°F - 350°F.
Bake the bread for about 25 minutes until the top is brown and sounds hollow when tapped.
