Add 2 teaspoons of dry active yeast to a bowl.
Add 2 teaspoons of white sugar and mix to combine.
Pour in 1 and 1/3 cups of warm water and let sit for 5 minutes until yeast activates.
Crack 1 egg into a separate bowl to avoid shell pieces, then add it to the yeast mixture.
Add 1 teaspoon of salt and mix the egg in with a fork.
Add 3 and 1/2 cups of all-purpose flour to the mixture and stir until combined.
If using a stand mixer, attach the dough hook and mix on setting 2 for 10 minutes; if mixing by hand, stir with a wooden spoon and knead for 12-15 minutes.
After kneading, check the dough's texture; if sticky, add a teaspoon of flour; if dry, add a teaspoon of water.
Place the dough in a clean bowl, cover with a towel, and let it rise in the oven on proof setting for 30-35 minutes until it has increased in size but not quite doubled.
After rising, scrape the dough onto a countertop and perform a quick 30-second knead to pop air bubbles.
Grease a cast iron loaf pan with plant butter using a plastic bag to spread it evenly.
Shape the dough into a log by flattening it, rolling it up, and placing it in the greased loaf pan.
Cover the dough with a rag and let it rise for another 35 minutes in the oven on proof setting.
