Honey adds natural sweetness and flavor.
balsamic vinegar

Red wine vinegar provides acidity without the cost.
Peel and slice onions to 1/4 inch or thinner, or dice them if preferred.
In a large pot, heat 1 tbsp olive oil and 1 tbsp butter.
Add sliced onions and stir on low heat; add a few sprigs of thyme and bay leaves.
Cover and cook for 10 minutes to caramelize the onions.
Add 100 ml white balsamic vinegar and 200 g sugar to the onions.
Cover and simmer for 15 minutes.
Remove thyme and bay leaves; sprinkle with 1 tsp sea salt.
Cook for another 10 minutes on medium heat to reduce the juice.
Let the onions cool completely for 4 hours.
Cook again for another 15-20 minutes until onions are transparent and the juice is sticky and amber in color.
