Wrap dough in plastic wrap and refrigerate for 30 minutes.
Preheat oven to 375°F (190°C).
Sauté onion in a pan until translucent, about 5 minutes.
Combine ricotta, feta, parsley, lemon zest, nutmeg, and black pepper in a bowl.
Roll out dough on a floured surface to about 1/8 inch thick.
Cut circles from the dough using a cutter.
Place a spoonful of filling on one half of each circle.
Fold the dough over to form a half-moon shape and seal edges with a fork.
Brush tops with egg wash before baking.
Place pastizzi on a baking sheet lined with parchment paper.
Bake for 20-25 minutes until golden brown.
