1

Wash and cut 2 bunches of cilantro.

2

Prepare 1 stalk of celery and 5 cloves of garlic.

3

Use 1 medium tomato that is not too ripe and 1 green bell pepper, cutting off the stems.

4

Chop the green parts of 3 green onions, discarding the white parts.

5

Chop 1.5 white or yellow onions.

6

Wash 8-9 tomatillos and prepare them.

7

Optionally, peel and prepare some potatoes, soaking them in water to prevent dehydration.

8

Wash and prepare 10-12 pieces of chicken (legs and thighs).

9

Boil water in a pot and add the chopped vegetables: onion, tomato, garlic, and celery.

10

Add the green bell pepper and tomatillos to the boiling water.

11

Season with salt to taste and add the chicken pieces.

12

Cook the chicken until it is about three-quarters done, ensuring it does not fall apart.

13

Remove the chicken pieces from the pot and let them cool; reserve the broth.

14

Once the vegetables are cooked, blend them in a blender until smooth, adding some of the reserved broth to help blend.

15

Add the cilantro to the blender and blend again until well mixed.

16

In a larger pot, heat a bit of vegetable oil and pour in the blended mixture, cooking it briefly.

17

Return the chicken pieces to the pot with the blended sauce and stir to coat them well.

18

Add 2-3 tablespoons of sour cream to the pot and mix well (this step is optional).

19

Simmer the dish on medium-high heat for 20-30 minutes, stirring occasionally.
