Instructions

  1. 1Rinse the whole chicken under cold water and pat dry.
  2. 2Stuff the cavity of the chicken with rice, ginseng, garlic, and ginger.
  3. 3Place the stuffed chicken in a large pot and add water until covered.
  4. 4Bring the water to a boil over high heat, then reduce to a simmer.
  5. 5Skim off any foam that forms on the surface during simmering.
  6. 6Add jujube, chestnuts, mushrooms, carrots, and onion to the pot.
  7. 7Cover and simmer for about 1-1.5 hours until the chicken is tender.
  8. 8Check the internal temperature of the chicken; it should reach 165ยฐF (75ยฐC).
  9. 9Remove the chicken from the pot and let it rest for a few minutes before carving.
  10. 10Season the broth with salt and pepper to taste.
