Drain and rinse the soaked beans.
Boil gombe beans in a pot with water until tender, about 1 hour.

Add chopped onions and sauté until translucent, about 5 minutes.
Stir in minced garlic and diced bell peppers; cook for 2-3 minutes.
Add chopped tomatoes and cook until softened, about 5 minutes.
Season with salt, black pepper, and cayenne pepper to taste.
Add the boiled gombe beans to the skillet and mix well.
Pour in a little water if the mixture is too dry; simmer for 10 minutes.
Stir in chopped spinach and cook until wilted, about 2 minutes.
Finish with a splash of lime juice and stir to combine.
Serve hot with rice or fufu.
