Bird's Nest Cookies
Preheat your oven to 350°F (175°C).
In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
Add the vanilla extract and mix well.
In a separate bowl, whisk together the flour, baking soda, and salt.
Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
Fold in the shredded coconut until evenly distributed.
Scoop tablespoon-sized portions of dough and roll them into balls.
Place the dough balls on a baking sheet lined with parchment paper, spacing them about 2 inches apart.
Using your thumb or the back of a spoon, create a small indentation in the center of each cookie to form a 'nest'.
Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden.
Remove from the oven and let cool for a few minutes before transferring to a wire rack.
Once cooled, fill the nests with chocolate eggs or candy-coated chocolates.
