Garlic Fried Rice

2 cups rice
1/2 teaspoon salt
3 to 4 tablespoons cooking oil
2 tablespoons finely chopped garlic
1 red chili, finely chopped
1/2 teaspoon crushed red chili powder

Wash the rice thoroughly 3 to 4 times with clean water to remove any mud.

Soak the rice for 45 minutes.

Heat water in a pot and add 1/2 teaspoon salt, mixing it well until dissolved.

Once the water is boiling, add the soaked rice (drained of soaking water) and boil on medium to high flame.

Boil the rice for about 7 to 8 minutes until cooked 100% and fluffy.

Turn off the flame and filter the water from the rice, then cool the rice at room temperature until fluffy and not sticky.

In a pan, heat 3 to 4 tablespoons of cooking oil.

Add 2 tablespoons of finely chopped garlic to the hot oil and fry for 1 to 2 minutes until aromatic and slightly colored.

Add the finely chopped red chili and 1/2 teaspoon of crushed red chili powder, frying for another 1 to 2 minutes for flavor.

Add the boiled rice to the pan and mix well on medium to low flame, ensuring the garlic and chili are well incorporated.

Turn off the flame and cover the pan for 5 minutes to let the rice firm up.
