Garlic Fried Rice

1 mug white jasmine rice
1 mug water

Wash 1 mug of white jasmine rice under cold running water to remove excess starch.

In a pot with a tight-fitting lid, combine the washed rice and 1 mug of water.

Bring the pot to a boil over high heat.

Once boiling, reduce the heat to a simmer and cook for 12 to 15 minutes without lifting the lid.

After cooking, turn off the heat and let the rice steam in the pot for another 5 to 10 minutes with the lid on.

Transfer the rice to a large plate to cool and release excess steam.

Finely chop 10 cloves of garlic.

In a wok, heat oil over medium heat and add the chopped garlic to shallow fry and infuse the oil with garlic flavor.

Keep the garlic moving to ensure even browning and prevent burning.

Once the garlic is golden brown, reserve some for garnish and drain off excess oil.

Add the cooled rice to the wok, pushing the garlic to the back.

Slowly fry the rice, breaking up any clumps with a spatula.

Season the rice with salt and pepper.

Turn off the heat and garnish with the reserved crispy garlic and finely sliced spring onions.
