Garlic Fried Rice

2 cups cooked rice
4 cloves garlic, minced
2 tablespoons vegetable oil
1/4 cup green onions, chopped
2 tablespoons soy sauce
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 cup mixed vegetables (peas, carrots, corn)
1 egg (optional)

Heat the vegetable oil in a large skillet over medium heat.

Add the minced garlic and sauté until fragrant, about 1 minute.

If using, push the garlic to one side of the skillet and crack the egg into the other side. Scramble the egg until fully cooked.

Add the cooked rice to the skillet, breaking up any clumps with a spatula.

Stir in the soy sauce, salt, and black pepper, mixing well to combine.

Add the mixed vegetables and continue to stir-fry for another 3-4 minutes until heated through.
