GARLIC FRIED RICE | The Ultimate Easy, Delicious Side

Rinse the rice until the water runs clear, then combine it with the water in a rice cooker and cook.

When the rice is cooked, spread it out on a large baking tray, tossing gently to cool the rice down rapidly.

Slice half the cloves of garlic into even slices and set aside. Finely mince the remaining cloves.

In a wok or large sauté pan, pour in the vegetable oil. Add the garlic slices and turn the heat to medium. Stir from time to time while the garlic slowly cooks in the oil until golden brown and crisp, about 8-10 minutes.

Drain the garlic chips on a plate lined with kitchen paper and set aside. Pour away half the oil.

Bring the heat up to high, and sauté the minced garlic until fragrant. Add the rice, and toss to coat each grain in the garlic-scented oil.

Stir in a good pinch of salt, then drizzle the soy sauce around the edges of the rice. Add the Worcestershire sauce, and toss to distribute.

Taste the rice, and season as required with salt and white pepper. Turn the heat off, and stir in the spring onion and butter, if using.

Serve the garlic rice topped with crispy garlic chips.
