Peel the carrots and cut off the top and bottom parts.
Cut the carrots into smaller pieces to cook quicker.
Cook the carrots in water with about 1 teaspoon of salt until they are soft.
Puree the cooked carrots in a cup.
In a pot, add 1 cup of water and 1 cup of short grain or arbor rice.
Add two pinches of salt to the rice and water mixture.
Cook the rice until it absorbs all the water, stirring to prevent burning or boiling over.
Add 500 mls of whole milk to the rice and simmer gently for about 40 minutes, stirring occasionally.
Mix the pureed carrots into the rice pudding.
Season the mixture with mace, ground cloves, cinnamon, and ginger.
Add heavy cream to the mixture and mix gently.
Transfer the mixture to an oven-proof bowl.
Sprinkle bread crumbs on top and add butter.
Bake in the oven at 150°C (300°F) for about 2 hours.
