2 medium tomatoes
2-3 tbsp cooking oil
1 tbsp butter
1 medium onion, finely chopped
2 tbsp garlic, chopped
½ tsp turmeric powder (optional)
½ tsp iodized Himalayan pink salt or to taste
½ tsp black pepper powder or to taste
1½ tbsp tomato paste
3 eggs
fresh coriander, chopped

Make cuts in the eggplants and grease with cooking oil.

Fire roast the eggplants over medium flame until the skin is charred, remove the charred skin, chop well, and set aside.

In a cast iron pan, add cooking oil and butter, and let it melt.

Add onion and garlic, mix well, and sauté until onions are translucent.

Add chopped tomatoes and tomato paste, mix well, and cook on medium flame for 2-3 minutes, slightly mash with a masher, and cook on medium flame for 1-2 minutes.

Add eggs one by one, cover, and cook on low flame for 2-3 minutes.

Garnish with fresh coriander and serve.
