Moroccan Almond Briwats

Wash and drain 500 grams of raw almonds, cover with hot water, and let set for 30 minutes.

In a bowl, combine dried blanched almonds with 250 grams of granulated sugar and mix.

Transfer the mixture to a food processor and pulse until smooth, scraping down edges as needed.

(Optional) Grind 2 arabic gum pebbles with 1 tablespoon sugar until fine powder.

Add 1.5 tablespoons ground cinnamon, arabic gum powder, 1.5 tablespoons orange blossom water, and 3 tablespoons unsalted butter to the almond paste and mix until smooth.

Roll the almond paste into small balls, about 1 tablespoon each.

Prepare the spring roll pastry by cutting it into 4 equal rectangles, each 5 centimeters wide.

Brush the top of a pastry strip lightly with vegetable oil and place an almond paste ball at the edge.

Fold the bottom left corner over the filling to create a triangle, then flip the bottom right corner upwards and align it with the left edge.
