Wash and drain 500 grams of raw almonds, cover with hot water, and let set for 30 minutes.
Drain and peel the almonds by squeezing them between fingers.
Place blanched almonds on a towel in a single layer and let dry for at least 2 hours.
In a bowl, combine dried blanched almonds with 250 grams of granulated sugar and mix.
Transfer the mixture to a food processor and pulse until smooth, scraping down edges as needed.
Place the almond paste into a bowl and set aside.
(Optional) Grind 2 arabic gum pebbles with 1 tablespoon sugar until fine powder.
Add 1.5 tablespoons ground cinnamon, arabic gum powder, 1.5 tablespoons orange blossom water, and 3 tablespoons unsalted butter to the almond paste and mix until smooth.
Roll the almond paste into small balls, about 1 tablespoon each.
Prepare the spring roll pastry by cutting it into 4 equal rectangles, each 5 centimeters wide.
Brush the top of a pastry strip lightly with vegetable oil and place an almond paste ball at the edge.
Fold the bottom left corner over the filling to create a triangle, then flip the bottom right corner upwards and align it with the left edge.
Continue folding the pastry while maintaining the triangle shape, sealing the tip with a flour and water mixture.
Heat 2 cups of honey with 1.5 tablespoons orange blossom water in a pan over low heat for a few minutes.
In a separate pan, heat vegetable oil over medium heat.
Fry the briwats in the hot oil for a few minutes until golden, stirring to cook evenly.
Remove from oil and drain excess oil before placing into the warm honey for 1-2 hours to absorb.
Transfer to a strainer to remove excess honey and optionally decorate with chopped almonds and sesame seeds.
