Start by melting 2 tablespoons of butter in a pot.

Chop and add 1 whole yellow onion and 1 shallot to the pot.

Saute the onions and shallots until they are translucent, about 3-4 minutes.

Add 1 tablespoon of minced garlic to the pot and let it cook down a little.

In a Vitamix, add the 28 ounces of diced tomatoes and puree until smooth, leaving some texture.

Once the onions and garlic are done, add them to the Vitamix with the tomatoes and blend together.

Pour the blended mixture back into the pot and let it simmer.

Chop fresh basil and set aside for later.

Add about 1 tablespoon of veggie stock to the pot and stir.
