Mango Coconut Granola Bars

Toast 2 and 1/4 cups of oats in the oven at 350°F for about 10 minutes until golden.
Toast 2 and 1/4 cups of nuts (almonds, pistachios, sunflower seeds) in the oven at 350°F for 10 minutes.
In a saucepan, combine brown rice syrup, apricot jam, brown sugar, vanilla, cinnamon, and a pinch of cayenne.
Cook the mixture over medium heat until it simmers, indicated by tiny bubbles around the edge of the pan.
In a large bowl, mix together the toasted oats, toasted nuts, and dried mango and coconut.
Pour the binder mixture over the dry ingredients and mix well to make everything sticky.
Line a pan with parchment paper before pouring in the mixture.
Compact the granola mixture in the pan, using a light spray of nonstick if it sticks to your fingers.
Bake in the oven for 20 to 30 minutes, depending on desired chewiness or crunchiness.
After baking, transfer to a wire rack to cool before cutting into bars.
