Soak 1 pound of black beans overnight.

Drain the beans and place them in a big heavy pot with 2 quarts of cold water.

Simmer the beans for about 1.5 to 2 hours without adding any seasoning.

Chop dried beef (beef jerky) into small pieces and add to the simmering beans along with a bay leaf.
