In a bowl, mix warm water, sugar, and active dry yeast; let it sit for about 5 minutes until foamy.
Combine the yeast mixture with flour, salt, and olive oil to form a dough.
Knead the dough for about 5 minutes until smooth and soft.
Let the dough rise for about 30 minutes.
Prepare the topping by mixing melted vegan butter, minced garlic, and Italian herbs.
After the dough has risen, divide it into pieces and shape them into bread sticks; brush them generously with the garlicky herb butter.
Bake the bread sticks until golden brown.
In a large pot, add olive oil and sauté garlic and onions.
Add sundried tomatoes to soften and release their flavor.
Add Italian herbs for additional flavor.
Pour in vegetable broth and bring to a slight boil for about 2 minutes.
Add pasta to the pot and let it simmer uncovered for about 10 minutes, stirring occasionally.
Mix 2 tablespoons of cornstarch with some liquid and add it back into the pot to thicken the sauce.
Add nutritional yeast for a cheesy flavor.
Toss in fresh spinach and season with salt, black pepper, and a pinch of red pepper flakes.
