Add 300g all purpose flour and 3g salt to a bowl and mix well.

Pour in 150ml boiling water and mix well with a spatula.

Add 1 egg, 1 tsp crushed red pepper (optional), and 10g chopped parsley or green onion, then mix well.

Pour in 15ml olive oil and knead the dough by hand until smooth.

Place the dough on a kneading board and roll it into a log.

Brush some oil into a dish and divide the dough into 8 parts.

Take a piece of the dough and shape it into a ball, then brush oil on the dough.

Rest the dough for at least half an hour.

In a separate bowl, mix 1 tbsp all purpose flour, 15ml olive oil, a pinch of salt, and black pepper to taste.

After half an hour, take one piece of dough and flatten it with your hands.

Roll out the dough with a rolling pin to a diameter of about 15cm.

Brush the oil mixture on the dough.

Cut the dough from the edge to the center and then roll up the dough.

Pinch the edge and flatten the dough with your palm.

Rest for 15 minutes.

After 15 minutes, flatten the dough with a rolling pin again.

Heat olive oil in a pan over medium heat.

Place the pancake into the pan and cook for 2 minutes on medium heat.

Flip over and cook for another 2 minutes until done.
