Pick up short ribs from the Box Meat Shop, cut to size.

Prepare the marinade: chop fresh green onions, fresh ginger, and fresh garlic.

In a bowl, combine 1 cup green onions, 1/2 cup chopped garlic, 1/2 cup chopped ginger, 2 cups soy sauce, 2 cups water, 1 tablespoon sesame oil, 1/2 teaspoon chili flakes, and 2 cups sugar.

Add a couple of sliced mandarin oranges to the marinade for citrus flavor and to help tenderize the meat.

Layer the marinade with the short ribs in a container, ensuring all meat is covered.

Use wax paper to submerge the meat in the marinade to prevent oxidation.

Cover the container and refrigerate for 2 days.

After 2 days, remove the ribs from the marinade and let them come to room temperature.

Season the ribs with salt and pepper before grilling.

Preheat the grill to the desired temperature and place the ribs on the grill.

Cook the ribs, flipping them as necessary, and check for doneness.

Watch for char spots due to the sugar in the marinade, and avoid overcooking.
