2 cups long-grain rice
1/2 cup dried djondjon mushrooms
4 cups water
1 medium onion, chopped
2 cloves garlic, minced
1/4 cup vegetable oil
1 tsp salt
1/2 tsp black pepper
1/2 tsp thyme
1/2 tsp parsley
1 bay leaf

Rinse the rice under cold water until the water runs clear, then drain.

Soak the dried djondjon mushrooms in warm water for about 30 minutes, then drain and chop them.

In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and garlic, and sauté until the onion is translucent.

Add the chopped djondjon mushrooms to the pot and cook for an additional 2-3 minutes.

Stir in the rice, salt, black pepper, thyme, parsley, and bay leaf, mixing well to coat the rice with the oil and spices.

Pour in the 4 cups of water and bring to a boil.

Once boiling, reduce the heat to low, cover the pot, and let it simmer for about 20 minutes or until the rice is cooked and the water is absorbed.

Remove the pot from heat and let it sit, covered, for an additional 5 minutes.
