1

Soak raw cashews in water to make them easier to split apart.

2

Clean the shrimp by removing the shell, then slitting the back and bottom to devein it completely.

3

In a large pot, boil Haitian black mushrooms in approximately 8 cups of water until the water evaporates.

4

Strain the mushroom water to extract the juices, which will be used to boil the rice.

5

Heat a pot on medium flame and add olive oil.

6

Add crushed garlic to the oil and sauté until fragrant.

7

Add the cleaned shrimp to the pot and sauté with the garlic.

8

Add dry spices, breaking up the bouillon cube to distribute it well.

9

Add the soaked and split cashews to the pot and continue sautéing.

10

Add frozen green peas and mix everything together.

11

Pour in the strained mushroom water, which should be dark in color, to give the rice its color.

12

Add the Scotch bonnet pepper for flavor, without cutting it.

13

Taste the water and add salt to taste, about two pinches or as desired.

14

Add the white jasmine rice to the pot and let it boil until most of the water evaporates.

15

Once the water has mostly evaporated, use a fork to fluff the rice slightly and cover the pot to let it steam.

16

Lower the heat and let the rice cook until fluffy, checking for doneness.
